Apple Pancakes
Ingredients
| 1/2 cup flour | 1/2 cup skim milk |
| 3 beaten eggs | 1 tsp. sugar |
| 1 cup apple, thinly sliced | 2 Tbs. low-fat margarine |
| pinch of salt | 1 tsp. vanilla |
| Sweet N' Low (= to1/4 cup sugar) | 2 tsp. cinnamon |
Preparation
Slice apple into thin slices (enough for a cup). Combine flour, salt, & sugar. Add beaten eggs, vanilla & milk. Mix with spoon until smooth. Set aside. Melt 1 Tbs. margarine in a non-stick skillet. Add sliced apples & cook for 1 or 2 minutes (do not allow to get too soft). Pour batter over sautéed apples. Bake at 400° for 10 minutes (pancakes should be almost done). Combine cinnamon & sweetener. Sprinkle on top of pancake & dot with 1 TBS. margarine. Return to oven & bake until lightly browned. Top with reduced-sugar preserves or syrup of choice. Serve while hot.
