Grandma’s Cornbread---Weight Watcher Style
Ingredients
| 1/2 Cup Buttermilk | 1/4 cup Egg Beaters |
| 1/4 tsp. baking soda | 1/4 tsp. salt |
| 1-1/2 ounces white cornmeal (5 tbs.) | 3 tbs. flour |
Preparation
Dissolve soda and salt in buttermilk (I mix this in a 2 cup
Pyrex measure) and beat in egg beaters well. Add
cornmeal (I use Aunt Jemima’s Self-Rising Cornmeal) and flour
which have been stirred together and mix well. Spray a small cast iron
skillet with Pam Spray and heat on the burner as if to fry pancakes. Pour
batter into hot 6” skillet. Immediately put into 400° oven and bake for
15-20 minutes.
Makes 2 servings. Each serving = 1 bread, 1/2 protein,
1/4 milk, and
30 optional calories.

I adapted this recipe from my grandmother's buttermilk cornbread recipe.
It serves 2, but can be doubled or tripled easily. Just use a bigger iron
skillet to bake it in!
