Oatmeal Carrot Bread
Ingredients
| 2 Cups whole wheat flour | 1 1/4 Cups quick Oatmeal |
| 1/2 Cup Brown Sugar | 1/2 Cup chopped Dates |
| 4 tsp. Baking Powder | 1/2 Tsp. Soda |
| 1/2 tsp. Cinnamon | 1/3 tsp. nutmeg |
| 1/8 tsp. Cloves | 1/2 cup frozen apple juice, thawed |
| 2 tbs. unsweetened Applesauce | 1/4 Cup Lite Corn Syrup |
| 1/4 Cup Water | 1 Cup grated Carrots |
| Egg Beater (equal to 1 egg) | 1/4 tsp. salt |
| Non-Fat cooking spray | 3 tbs. quick oats |
Preparation
Spray loaf pan with cooking spray. Preheat oven to 350°. Sift together flour, soda, baking powder, brown sugar, spices, & salt. Add in 1 1/4 cup oatmeal & Mix well. Combine water, egg beater, Thawed apple juice, applesauce, & corn syrup. Add to dry ingredients & mix until all is moistened. Stir in Dates & grated carrots. Spread evenly in prepared loaf pan. Sprinkle 3 tablespoon oatmeal on top of mixture. Bake 1 hour, cool 15 minutes in pan.
