Pumpkin Bread Lite
Ingredients
| 1 1/2 cups sugar | 3 1/2 cups flour |
| 2 tsp. soda | 1/2 tsp. salt |
| 1 tsp. nutmeg | 1 tsp. ground cloves |
| 1 tsp. allspice | 1/2 tsp. ginger |
| 1 tsp. cinnamon | 1 cup applesauce |
| 2 cups prepared pumpkin | 4 egg beaters equal to 4 eggs |
| 1 cup water | 1 cup dates, chopped |
| 2 tsp. powdered sugar (optional) |
Preparation
Preheat oven to 325°. Sift together flour, sugar, salt, soda, nutmeg, cloves, allspice, ginger, & cinnamon. Mix together eggs substitute & water. Combine flour mixture & egg mixture. Mix well & add Pumpkin, applesauce, & dates. Pour into a greased tube pan. Bake 1 hour or until toothpick inserted in middle of cake comes out clean. Best if served while still warm. Let cool 15 minutes & sprinkle with powdered sugar if desired.
