Apricot Cake
Ingredients
| 1 Duncan Hines Yellow Cake mix | Egg Beaters (equal to 3 eggs), slightly beaten |
| 1 can apricots with juice, cut in pieces | 1/2 cup sugar-free apricot preserves |
| Non-fat cooking spray | 1 tsp. vanilla extract |
Preparation
Preheat oven to 350°. Spray bundt cake pan with non-fat cooking spray & sprinkle, with flour. Combine cake mix, Egg Beaters, vanilla, & juice of apricots. Beat with mixer for 2 minutes. Add apricot pieces & beat 30 seconds more. Pour into prepared pan. Bake for 50 minutes. Cool in pan for 5 minutes. Remove from pan. Warm preserves & drizzle over cake.
