Banana Cream Pie Lite

Ingredients

3  Eggbeaters(= to 3 eggs) 6  packets Sweet n Low
2  sliced bananas 1  Envelope unflavored gelatin
1  1/2 cups skim milk 2  tsp. Vanilla Extract
1  tbs. lemon juice 1  pie crust, baked

Preparation

Soften gelatin in 1/2 cup milk, in top of a double.   Beat together eggs & 1 cup of milk.  Add to milk mixture.   Heat over hot water stirring constantly, until mixture coats a metal spoon.    Remove from heat.  Add Sweet n Low and vanilla extract.  Sprinkle bananas with lemon juice.  Arrange on bottom of baked crust.  Pour gelatin mixture over bananas.  Refrigerate several hours before serving.
