Banana Cream Pie Lite
Ingredients
| 3 Eggbeaters(= to 3 eggs) | 6 packets Sweet n Low |
| 2 sliced bananas | 1 Envelope unflavored gelatin |
| 1 1/2 cups skim milk | 2 tsp. Vanilla Extract |
| 1 tbs. lemon juice | 1 pie crust, baked |
Preparation
Soften gelatin in 1/2 cup milk, in top of a double. Beat together eggs & 1 cup of milk. Add to milk mixture. Heat over hot water stirring constantly, until mixture coats a metal spoon. Remove from heat. Add Sweet n Low and vanilla extract. Sprinkle bananas with lemon juice. Arrange on bottom of baked crust. Pour gelatin mixture over bananas. Refrigerate several hours before serving.
