Beans & Rice Lite
Ingredients
| 4 cups Pinto Beans (or red beans) | 1 chopped onion |
| 2 lb. diced smoked sausage, fat-free | 3 pkg. Sweet n low |
| salt & pepper to taste | 1 tsp. Cajun seasoning |
| 1 tsp. garlic powder | 2 cups rice (cooked separately) |
Preparation
Wash beans well & cover with 10 cups water. Soak overnight. Drain & cover with 6 cups of fresh water. Add remaining ingredients except rice& Sweet n Low. Cook over low heat until beans are done (approximately 2 to 3 hours). Add Sweet n low just before removing from heat. Serve over cooked rice.
