Beef & Bean Casserole Lite
Ingredients
| 1 lb. ground chuck | 1 cup chopped green onions |
| 1 tsp. Canola oil | 1/2 tsp. paprika |
| 1 tsp. garlic powder | 1 tsp. Cajun seasoning |
| 1/4 tsp. oregano | 1 tsp. sugar |
| 1/2 tsp. black pepper | 1 tsp. salt |
| 1 can tomatoes & green chilies | 1 can pinto beans |
| 8 oz. can tomato sauce | 2 beaten eggs |
| 1/2 cup skim milk | 1 1/4 cup self rising corn meal mix |
| Non-Fat cooking spray |
Preparation
Sauté ground chuck & green onions in 1 tsp. Canola oil. Drain &
add seasonings to taste. Add beans, tomato sauce & tomatoes &
green chilies. Stir to mix well. Cook for 15 minutes over medium heat. Spray a
baking dish with cooking spray. Pour beef mixture into prepared dish.
Combine beaten egg, milk, & corn meal mix (I use yellow meal mix, looks
prettier). Spread evenly on top beef mixture. Bake at 375° 25-30
minutes or until browned.
