Carrot Casserole
Ingredients
| 1 can cream of mushroom soup, fat-free | 1/2 cup onion, finely chopped |
| 2 16 oz. cans carrots, diced | 1/2 cup potato chips, reduced fat |
| 2 pkg. Sweet n Low | non-fat cooking spray |
Preparation
Sauté onion in a pan sprayed with cooking spray. Combine mushroom soup & sautéed onion. Alternate layers of carrots & soup mixture in a 1 quart, greased casserole dish. Bake at 325° F for 20 to 25 minutes. Just before removing from oven, sprinkle with crushed chips. Brown lightly.
