Lowfat Cranberry Oatmeal Muffins
Ingredients
| 3/4 cup plain flour | 3/4 cup whole wheat flour |
| 1 cup oatmeal | 1/2 cup unsweetened applesauce |
| 1 cup skim evaporated milk | 1/2 cup brown sugar |
| 1 tsp. ground cinnamon | 1/2 tsp. allspice |
| 1 tsp. salt | 1 tbs. baking powder |
| 1 cup cranberries, no sugar added | 1 tsp. canola oil |
| 2 Egg Beaters (= to 2 eggs) | non-fat cooking spray |
Preparation
Sift together flours, spices, baking powder, & salt. Combine milk, canola oil, applesauce, & egg beaters & add dry ingredients. Add oatmeal. Chop cranberries & add to mixture. Spray muffin tins with non-fat cooking spray & fill about 2/3 with batter. Bake in preheated 425° oven for 12 to 15 minutes. Let cool 3 minutes in pan & remove from pan onto a wire rack to finish cooling.
