Creamy Carrot Soup Lite
Ingredients
| 1 lb. carrots, peeled & chopped | 1 potato, peeled and chopped |
| 1/2 cup fat-free margarine | 3 cups chicken stock, with fat removed |
| 1 tsp. salt | 1/4 tsp. black pepper |
| 1/2 tsp. Greek seasoning | 2 packets Sweet n Low |
Preparation
Skim fat from broth. In a saucepan over medium heat, place carrots and potatoes and add water to cover; simmer until vegetables are tender. Puree carrots, potato, margarine, Greek seasoning, salt, & pepper in blender. Return puree to saucepan & add broth. Simmer over medium heat until hot. Stir in Sweet n Low. Serve with fat-free crackers.
