Creamy Carrot Soup Lite

Ingredients

1  lb. carrots, peeled & chopped 1  potato, peeled and chopped
1/2  cup fat-free margarine 3  cups chicken stock, with fat removed
1  tsp. salt 1/4  tsp. black pepper
1/2  tsp. Greek  seasoning 2  packets Sweet n Low

Preparation

Skim fat from broth.  In a saucepan over medium heat, place carrots and potatoes and add water to cover; simmer until vegetables are tender.  Puree carrots, potato,  margarine, Greek seasoning, salt, & pepper in blender.  Return puree to saucepan & add broth.  Simmer over medium heat until hot.  Stir in Sweet n Low.  Serve with fat-free crackers.
