Date Oatmeal Cookies
Ingredients
| 1 1/2 cups plain flour | 4 tsp. Sweet n Low Liquid |
| 3/4 cup low-fat margarine, softened | 1 tsp. salt |
| 2 Egg Beaters (equal to 2 eggs) | 3/4 cup quick oats |
| 1/2 cup dates | 1 tsp. soda |
| 1/2 cup raisins | 1/2 tsp. cloves |
| 1/2 tsp. cinnamon | 1 tsp. allspice |
| 2 bananas, mashed | 2 tsp. vanilla extract |
| 1 cup chopped pecans | 1/2 cup boiling water |
| Non-fat cooking spray |
Preparation
Preheat oven to 350°. Pour 1/2 cup boiling water over dates & raisins. Let stand until cool. Beat together margarine, vanilla, slightly beaten Egg Beaters, Sweet n Low, & mashed bananas. Sift together flour, salt, soda, cloves, allspice, & cinnamon. Add flour mixture to banana mixture. Stir in fruit & water mixture, oats, & pecans. Blend well. Line a cookie sheet with foil & spray foil with cooking spray. Drop cookie batter onto cookie sheet by teaspoonfuls. Bake 12 to 14 minutes (do not over bake).
