Fresh Apple Cake
Ingredients
| 1/2 cup corn syrup | 1/2 cup brown sugar |
| 1/2 cup reduced fat margarine, melted | 4 egg whites, beaten |
| 1/3 cup low-fat buttermilk | 1/2 c up unsweetened applesauce |
| 1 tsp. vanilla extract | 2 1/4 cup plain flour |
| 1 tsp. soda | 1/4 tsp. salt |
| 1 tsp. cinnamon | 1/2 tsp. cloves |
| 1 tsp. allspice | 1/2 tsp. nutmeg |
| 2 cups chopped apples | 1 cup chopped dates |
| Non-fat cooking spray |
Preparation
Preheat oven to 350°. Sift together flour, salt, soda, cinnamon, cloves, allspice, & nutmeg. Mix together melted margarine, corn syrup, brown sugar, egg whites, vanilla ,& applesauce. Stir flour mixture into egg mixture, alternating with buttermilk. Mix well. Add apples & dates. Spray bundt pan with cooking spray. Bake for 1 hour.
