Lowfat Glazed Carrots & Pineapple

Ingredients

1  lb. fresh carrots, sliced & cooked 1/2  cup crushed pineapple in own juice
2  tsp. cornstarch 1/2  cup water
1/4  tsp. salt 1  tsp. low-fat margarine
1  tbs. Sweet N' Low

Preparation

Slice carrots & cook until tender (but not mushy). Set aside.  Place water & pineapple into a saucepan.  Add cornstarch & salt.  Cook, stirring constantly, until mixture comes to a boil.  Boil 1 minute. Add margarine & sweetener.  Stir in carrots & remove from heat.
