Lowfat Glazed Carrots & Pineapple
Ingredients
| 1 lb. fresh carrots, sliced & cooked | 1/2 cup crushed pineapple in own juice |
| 2 tsp. cornstarch | 1/2 cup water |
| 1/4 tsp. salt | 1 tsp. low-fat margarine |
| 1 tbs. Sweet N' Low |
Preparation
Slice carrots & cook until tender (but not mushy). Set aside. Place water & pineapple into a saucepan. Add cornstarch & salt. Cook, stirring constantly, until mixture comes to a boil. Boil 1 minute. Add margarine & sweetener. Stir in carrots & remove from heat.
