Grits & Sausage Lite
Ingredients
| 3/4 cups quick grits | 1 1/2 cups evaporated skim milk |
| 1 1/2 cups water | 3/4 cup fat free cheese, grated |
| 1/2 lb. Turkey Sausage, breakfast | 1/2 tsp. garlic powder |
| 3 egg whites | 1 1/2 cups red bell pepper strips |
| 1 pkg. Sweet 'N Low | Salt & pepper to taste |
| Non-fat Cooking Spray | 1 tsp. Canola Oil |
Preparation
Preheat oven to 375°. Crumble sausage & cook over medium heat until done. Drain. In a large saucepan, combine milk & water. Bring to a boil & add grits. Reduce heat & cook until grits thicken (approximately 8 minutes). Combine grits & sausage. Add Sweet 'N Low, cheese, garlic powder, & salt & pepper as desired. Beat egg whites until they form peaks. Stir into mixture. Spray a baking dish with non-fat spray. Pour mixture into prepared dish.. Bake for 30 minutes or until browned. Place 1 tsp. Heat canola oil in skillet. Sauté pepper strips until tender. Serve grits topped with pepper strips.
