Italian Crème Cake
Ingredients
| 1 Pkg. low-fat white cake mix | 5 egg whites, beaten |
| 1/3 cup flaked coconut | 1/2 cup chopped pecans |
| 8 tbs. low-fat margarine | 4 tbs. fat-free cream cheese |
| 6 cups powdered sugar | 2 tsp. vanilla extract |
| 2 tsp. skim milk | 1/2 cup chopped pecans |
Preparation
If you want to reduce fat even more, substitute 1/3 cup of chopped dried fruit in place of the 1/3 cup flaked coconut & 1/2 cup grapenuts cereal in place of first 1/2 cup of chopped pecans.
Prepare cake mix according to package directions
Fold in coconut, 1/2 cup pecans, beaten egg whites
Bake at 350° for 20-25 minutes & let cool
Frosting:
Blend 8 TBS low-fat margarine, 4 TBS fat-free cream cheese, 6 cups powdered sugar, 2 tsp. vanilla, & 2 tsp. skim milk & add 1/2 cup chopped pecans
Spread frosting over cooled cake
