Lemon Cake Lite
Ingredients
| 2 egg whites | 1/2 cup sugar |
| 1/2 cup fat-free margarine | 1 cup sugar |
| Egg substitute = to 1 egg, beaten | 2 1/4 cups flour |
| 1 tsp. salt | 1 Tbs. baking powder |
| 1/2 cup evaporated skim milk | 1/4 cup lemon juice |
| 2 tsp. lemon rind, grated | 1 small pkg. instant, sugar-free pudding mix |
| Non-fat cooking spray |
Preparation
Preheat oven to 350°. Beat egg whites lightly. Add 1/2 cup sugar & beat until it forms stiff peaks. Set aside. Combine margarine & 1 cup sugar. Beat until light and fluffy. Add beaten egg substitute & mix well. Sift together, flour, salt, & baking powder. Add flour mixture to sugar alternately with milk. Mix well after each addition. Add lemon juice. Fold in beaten egg whites. Spray 3 round cake pans with cooking spray & sprinkle with flour. Bake 25 minutes or until tooth pick inserted in center comes out clean. Cool 8 to 10 minutes in pans. Remove from pans & finish cooling.
Prepare filling: Prepare pudding mix according to package directions. Stir in lemon rind. Spread filling on each cake layer & on top of cake.
