Lemon Cheese Cake Lite
Ingredients
| 2 cups graham crackers crumbs | 4 oz. pkg. sugar-free lemon Jell-O |
| 2/3 c. boiling water | 1 cup fat-free cottage cheese |
| 2 cup Cool Whip lite | 8 oz. pkg. fat-free cream cheese |
| 1-1/2 cups fresh strawberries | non-fat cooking spray |
Preparation
Spray a spring form pan with cooking spray. Sprinkle graham cracker crumbs in
bottom of pan. Dissolve Jell-O in boiling water. Pour into
blender. Add cream cheese & cottage cheese. Blend until
smooth. Pour into large bowl. Gently stir in Cool Whip. Spread
evenly over graham cracker crumbs (in pan). Chill several hours or
overnight. Remove sides of pan & place strawberries around outer edge
of cheese cake.
