Lite Mississippi Mud Bars

Ingredients

6   tbs.  low-fat margarine, melted 1 3/4   cups sugar
1   cup unsweetened applesauce 1/4  cup unsweetened cocoa
1/2   tsp. salt 8  oz. Egg Beaters
2   tsp. vanilla extract 1 3/4  cups plain flour
1/2   tsp. baking powder 1/2  cup flaked coconut
3   cups mini marshmallows Non-fat cooking spray

     Make Topping with 8 items below

2  tbs. Low-Fat margarine 1  oz. unsweetened chocolate
1/3  cup unsweetened cocoa 1/3  cup evaporated skim milk
1  cup powdered sugar 1  tsp. vanilla extract
1/4  cup pecans 1/4  cup coconut

Preparation

Preheat oven to 350°.  Spray 9x13 pan with non-fat cooking spray & sprinkle with flour. Melt t6TBS margarine in a saucepan over low heat.  Mix 1 3/4 cups sugar, salt & 1/4 cup cocoa together.   With a wire whisk stir sugar mixture & applesauce into Margarine. Remove from heat & add Egg Beaters & vanilla extract.  Mix flour & baking powder together & stir into mixture.  Add coconut & pour into prepared pan.  Bake for 25 minutes & remove from oven.  Spread marshmallows on top & return to oven.  Cook until marshmallows are melted & lightly browned.  Remove from oven & allow to completely cool

        Topping

Combine 2 TBS margarine, & 1 oz. chocolate in a saucepan.  Melt over low heat.  Mix together cocoa & powdered sugar.  With a wire whisk stir in cocoa mixture, 1/3 cup milk, vanilla, coconut, & pecans. Spread evenly over cooled cake.
