Lowfat Banana Oatmeal Cookies
Ingredients
| 3/4 cup boiling water | 1 cup chopped dated |
| 1 egg, beaten | 3/4 cup reduced-fat soft margarine |
| 3 tbs. Sweet N' Low | 1 tbs. vanilla extract |
| 2 bananas, mashed | 1 tsp. soda |
| 1 tsp. allspice | 1/2 tsp. cinnamon |
| 1 1/2 cups flour | 1 tsp. salt |
| 3/4 cups quick oats | 1/2 chopped pecans, optional |
| Non-fat cooking spray |
Preparation
Preheat oven to 350°. Pour boiling water over dates & let stand until cooled. Combine margarine, egg, Sweet N' Low, & bananas. Mix until blended. Sift together, flour, soda, allspice, cinnamon, & salt. Add to banana mixture & blend well. Add vanilla, oats, dates, pecans. Spray a cookie sheet with cooking spray. Drop batter by spoonfuls onto cookie sheet. Bake 12-14 minutes. Do not over bake.
