Lowfat Blueberry Bran Muffins
Ingredients
| 2 1/2 cups flour | 4 tsp. baking powder |
| 2 tsp. soda | 1/2 tsp. allspice |
| 1/2 tsp. cinnamon | 3 cups bran flakes |
| 1 cup granulated fructose | 6 egg whites, slightly beaten |
| 1 1/2 cups skim milk | 2/3 cup orange juice |
| 1/2 cup honey | 2 1/2 cups blueberries |
| 2 cups finely diced apple | Non-Fat cooking spray |
Preparation
Sift together, flour, soda, baking powder, cinnamon, allspice, &
fructose. Combine with bran flakes. Beat egg whites slightly &
add milk, orange juice, & honey. Combine with flour
mixture. Mix well. Add apples & blueberries & stir to
mix. Spray muffin tins with cooking spray. Pour batter to fill tins 2/3
full. Bake at 350° for 30 minutes or until lightly browned. Cool 5
minutes before removing from pan.
