Lowfat Bran Muffins
Ingredients
| 2 1/2 cups low-fat Bran Flakes Cereal | 1 1/4 cup skim milk |
| Egg Beater (= 1 egg) | 1/2 cup applesauce, no sugar added |
| 2 tsp. vanilla extract | 1 1/4 cups all purpose flour |
| 1/2 cup sugar | 1/2 tsp. salt |
| 1 tbs. baking powder | 2 tsp. allspice |
| 1/2 tsp. cinnamon | non-fat cooking spray |
Preparation
Preheat oven to 400°. Crush bran flakes & mix with milk. Let stand for about 5 minutes. Add egg beater & beat well. Stir in applesauce & vanilla. Sift together, flour, sugar (add more sugar if desired), salt, baking powder, allspice, & cinnamon. Gradually add flour mixture to bran flake mixture. Spray muffin tins with cooking spray & fill 3/4 full with batter. Bake 20 to 25 minutes or until lightly browned.
