Lowfat Bran Muffins

Ingredients

2 1/2  cups low-fat Bran Flakes Cereal 1 1/4  cup skim milk
Egg Beater (= 1 egg) 1/2  cup applesauce, no sugar added
2  tsp. vanilla extract 1 1/4  cups all purpose flour
1/2  cup sugar 1/2  tsp. salt
1  tbs. baking powder 2  tsp. allspice
1/2  tsp. cinnamon non-fat cooking spray

Preparation

Preheat oven to 400°.  Crush bran flakes & mix with milk.  Let stand for about 5 minutes.  Add egg beater & beat well.   Stir in applesauce & vanilla. Sift together, flour, sugar (add more sugar if desired), salt, baking powder, allspice, & cinnamon.  Gradually add flour mixture to bran flake mixture.  Spray muffin tins with cooking spray & fill 3/4 full with batter.  Bake 20 to 25 minutes or until lightly browned.
