Lowfat Cheesy Cauliflower
Ingredients
| 1 head cauliflower | 2 tsp. salt |
| 1/4 cup margarine, fat free | 1/2 tsp. black pepper |
| 1/2 lb. low fat Velveeta cheese, grated |
Preparation
Wash cauliflower & break off the flowerets. Cut stems into small pieces. Put stems, cauliflower & salt in a large saucepan & cover with water. Boil until Cauliflower in tender, but not mushy. Drain & stir in margarine, pepper & cheese. Mix gently over very low heat until cheese is melted.
