Lowfat Cherry Pie
Ingredients
| 1 1/2 cups low-fat graham cracker crumbs | 2 16 oz. cans cherries, unsweetened |
| 1/4 cup fat-free margarine, melted | 1/2 tsp. almond extract |
| 1 1/2 cup Equal | 8 oz. Cool Whip Lite |
Preparation
Preheat oven to 400°. Place graham crackers in blender & crush. Mix crumbs & margarine and mix well. Press into bottom & sides of a pie plate. Bake 10 minutes & cool. Drain cherries reserving one cup of juice. Set aside cherries. Combine cornstarch & cherry juice. Cook over medium heat, stirring constantly, until mixture is transparent & thickened. Remove from heat & add equal, almond extract, & cherries. More sweetener may be added if desired (too much may have a bitter taste). Partially cool & pour graham crust. Chill in refrigerator & top with cool whip.
