Chicken & Broccoli Casserole
Ingredients
| 1/4 cup low-fat margarine | 1 chopped onion |
| 1 tsp. salt | 1 tsp. Black pepper |
| 1 can fat-free cream of mushroom soup | 2 cups cooked rice |
| 1 boiled & deboned chicken | 1 lb. reduced-fat Velveeta cheese |
| 1 10 oz. frozen (cut) broccoli | 1/3 cup finely chopped bell pepper |
| 1 cup skim milk | Non-fat cooking spray |
Preparation
Sauté onion & bell pepper in margarine. Combine cheese, milk, and soup in a pan. Cook over low heat until cheese is melted. Add onion mixture & black pepper. Combine. thawed broccoli, chicken, rice & salt with cheese mixture. Spray a casserole dish with cooking spray. Pour mixture into prepared casserole dish. Bake at 350 ° F for 30 minutes. Casserole is done when mixture thickens & bubbles around the edges.
