Lowfat Chicken & Dumplings
Ingredients
| 2 cups chicken, cooked & boned | 2 pkg. fat-free flour tortillas |
| 1 cup skim evaporated milk | salt & pepper to taste |
| 2 tbs. fat-free margarine |
Preparation
Boil chicken until tender. bone & set aside. Reserve broth. Add milk & margarine to broth. Bring to a rolling boil. Cut tortillas into 1 inch strips & drop into boiling liquid. Cook until tender. Add chicken & cook until chicken heats.
If you prefer, you can combine 3 cups of biscuit mix & 1 1/2 cups milk until smooth, then drop by teaspoonfuls into the boiling liquid.
