Lowfat Gingerbread
Ingredients
| Egg Beater = 1 egg | 1/4 cup molasses |
| 1/2 cup brown sugar | 2 pkg. Sweet N Low |
| 3 tbs. fat-free margarine, melted | 1/2 cup fat-free buttermilk |
| 1 cup all purpose flour | 1/4 tsp. salt |
| 1/2 tsp. baking soda | 1 1/2 tsp. ginger |
| 1 1/2 tsp. allspice | non-fat cooking spray |
| 8 oz. Cool Whip Lite |
Preparation
Beat Egg Beater. Add molasses, brown sugar, & Sweet N Low. Continue
beating until light & smooth. Mix in melted margarine &
buttermilk. Sift together, flour, salt, soda, ginger, &
allspice. Gradually add to sugar mixture. Mix well. Spray a 9x9 baking pan
with cooking spray & sprinkle with flour. Pour batter into pan.
Bake in preheated 350° oven for 30 minutes or until a knife inserted in
center comes out clean. Partially cool & top with Cool Whip.
