Lowfat Lemon Chess Pie
Ingredients
| 1 1/4 cup sugar | 2 tbs. all-purpose flour |
| 1/3 tsp. salt | 2 eggs, beaten |
| 1/4 cup skim evaporated milk | 3 tbs. fat-free margarine, melted |
| 1 tsp. butter flavoring | 3 tbs. lemon juice |
| 1 grated lemon rind | pie shell, unbaked |
Preparation
You may use egg substitutes equal to 2 eggs in place of the eggs. Sift together sugar, flour, & salt. Melt margarine & add to mixture, Add milk, eggs, flavoring, lemon juice & lemon rind. Pour into unbaked pie shell. Bake at 350 for 45 minutes or until lightly browned.
