Lowfat Lemon Chess Pie

Ingredients

1 1/4  cup sugar 2  tbs. all-purpose flour
1/3  tsp. salt 2  eggs, beaten
1/4  cup skim evaporated milk 3  tbs. fat-free margarine, melted
1  tsp. butter flavoring 3  tbs. lemon juice
1  grated lemon rind pie shell, unbaked

Preparation

You may use egg substitutes equal to 2 eggs in place of the eggs.  Sift together sugar, flour, & salt.  Melt margarine & add to mixture,  Add milk, eggs, flavoring, lemon juice & lemon rind.  Pour into unbaked pie shell.   Bake at 350 for 45 minutes or until lightly browned.
