Lowfat Potato Salad
Ingredients
| 6 cups red potatoes, unpeeled | 1/2 cup purple onion , diced |
| 1/2 tsp. garlic powder | 1 tsp. celery seed |
| 1 tsp. lemon juice | 1 tsp. parsley flakes |
| 1 tsp. curry powder | 2 tsp. mustard |
| 1/2 cup fat-free plain yogurt | 1 cup fat-free sour cream |
| salt & pepper to taste |
Preparation
Boil unpeeled whole potatoes until tender. Cool & cut into desired size. Combine remaining ingredients & add to potatoes. Mix well. May be served immediately or chilled in refrigerator until ready to serve.
