Lowfat Scalloped Potatoes
Ingredients
| 5 potatoes, sliced thin | 1 cup grated, fat-free cheddar cheese |
| 1 tsp. salt | 1/2 tsp. black pepper |
| 1 cup skim evaporated milk | 1 cup hot water |
| 3 tbs. all-purpose flour |
Preparation
Make a sauce of 1 cup evaporated milk, 1 cup hot water, & 3 (or 4) TBS flour. Add salt & pepper. Cook sauce over low heat until thickened, stirring constantly. Peel & slice potatoes & cook in boiling water until tender. Place a layer of potatoes in bottom of a 2 quart baking dish. Sprinkle a layer of grated cheese over potatoes. Add a layer of white sauce. Repeat layers ending with cheese on top. Bake in preheated 400° oven for 30 minutes.
