Lowfat Sweet Potato Pie
Ingredients
| 1/2 cup plus 2 tbs. self rising flour | 1/4 cup fat-free margarine |
| 1 tsp. cold water | 1/2 cup fat-free margarine, melted |
| 1-1/2 cups cooked & mashed sweet potatoes | 3 tbs. flour |
| Sugar substitute equal to 1 1/2 cups sugar | 2/3 cup evaporated skim milk |
| 3 Egg Beaters, beaten (= 3 eggs) | 1 tsp. vanilla extract |
| 1 tsp. lemon extract | 1 1/2 tsp. allspice |
Preparation
Mix 1/2 cup plus 2 TBS flour, 1/4 margarine, & 1 tsp. cold water & blend well. Roll out until thin & line a pie pan with it. Combine remaining ingredients & mix well. Pour into unbaked pie crust. Bake at 350° for 55 minutes. Test doneness with a silver knife.
