Relleno Casserole Lite

Ingredients

4 egg whites, beaten 1 cup skim evaporated milk
1 tsp. garlic powder 1/3 cup flour
2 pkg. sugar substitute 12 oz. canned whole green chilies
1 lb. lowfat, sharp cheddar cheese, shredded 8 oz. tomato sauce
Non-fat cooking spray

Preparation

Beat egg whites.  Add milk.  Combine flour, garlic powder, & sweetener.  Gradually add flour mixture to egg mixture. Beat until well blended.  Split chilies,  remove seeds, & drain well.  Spray a baking dish with cooking spray.  Place a layer of egg mixture in bottom of prepared dish.   Add a layer of chilies, then a layer of cheese.  Repeat layers.  Pour tomato sauce over top of casserole.   Reserve enough cheese to top casserole.   Bake in 350° oven for 45 minutes.  Top with reserved cheese & bake 10 minutes more, or until cheese is melted & bubbly.
