Relleno Casserole Lite
Ingredients
| 4 egg whites, beaten |
1 cup skim evaporated milk |
| 1 tsp. garlic powder |
1/3 cup flour |
| 2 pkg. sugar substitute |
12 oz. canned whole green chilies |
| 1 lb. lowfat, sharp cheddar cheese, shredded |
8 oz. tomato sauce |
| Non-fat cooking spray |

Preparation
Beat egg whites. Add milk. Combine flour, garlic powder, &
sweetener. Gradually add flour mixture to egg mixture. Beat until well
blended. Split chilies, remove seeds, & drain well. Spray
a baking dish with cooking spray. Place a layer of egg mixture in bottom
of prepared dish. Add a layer of chilies, then a layer of
cheese. Repeat layers. Pour tomato sauce over top of
casserole. Reserve enough cheese to top casserole. Bake
in 350° oven for 45 minutes. Top with reserved cheese & bake 10
minutes more, or until cheese is melted & bubbly.
