Rice Pudding Lite

Ingredients

1  qt. skim milk 1  qt. 2% milk
1  cup sugar 1  tsp. nutmeg
1 1/2  tsp. cinnamon pinch of salt
1  cup raisins 1  tsp. vanilla extract
2/3  cup long grain rice 1/2  cup fat-free margarine
Non-fat cooking spray

Preparation

Spray an extra  heavy baking dish generously with cooking spray (may use crock pot liner).  Combine sugar, cinnamon, salt, & nutmeg.  Add skim & 2% milk. Mix well.  Stir in  vanilla, raisins & rice. Pour into prepared baking dish.  Dot top  with margarine. Bake uncovered at 350° for 30 minutes.  Stir frequently. Bake without stirring for 90 minutes more.   Place on a wire rack & allow to cool at room temperature.  Pudding will thicken as it cools.
