Rice Pudding Lite
Ingredients
| 1 qt. skim milk | 1 qt. 2% milk |
| 1 cup sugar | 1 tsp. nutmeg |
| 1 1/2 tsp. cinnamon | pinch of salt |
| 1 cup raisins | 1 tsp. vanilla extract |
| 2/3 cup long grain rice | 1/2 cup fat-free margarine |
| Non-fat cooking spray |
Preparation
Spray an extra heavy baking dish generously with cooking spray (may use crock pot liner). Combine sugar, cinnamon, salt, & nutmeg. Add skim & 2% milk. Mix well. Stir in vanilla, raisins & rice. Pour into prepared baking dish. Dot top with margarine. Bake uncovered at 350° for 30 minutes. Stir frequently. Bake without stirring for 90 minutes more. Place on a wire rack & allow to cool at room temperature. Pudding will thicken as it cools.
