Scalloped Potatoes Lite
Ingredients
| 3 tbs. plain flour | 1 tsp. salt |
| 1/2 tsp. black pepper | 1/4 tsp. paprika |
| 3/4 cup low-fat coffee creamer | 1/2 tsp. garlic powder |
| 1/2 cup chopped onion | 6 potatoes, sliced thin |
| 3 tbs. low-fat margarine | 1 1/2 cups boiling water |
| 1 jar spicy pimentos | 1 cup fat-free cheese, grated |
| Non-fat cooking spray |
Preparation
Spray 3 quart casserole with cooking spray. Preheat oven to 350°. Mix together, flour, pepper, salt, paprika, & garlic powder. Place a layer of spiced potatoes in bottom of prepared casserole dish. Sprinkle part of dry mix on top. Repeat layers. Combine boiling water & margarine. Pour over top layer. Bake for 55 minutes or until potatoes are tender. Sprinkle grated cheese on top of casserole. Bake until cheese is melted.
