Squash Casserole Lite
Ingredients
| 2 cups cooked yellow squash | 1/2 cup fat-free margarine |
| Egg Beaters (=2 eggs) | 1 tsp. salt |
| 1/2 tsp. black pepper | 1 cup chopped onion |
| 1 cup grated cheese, fat-free | 1 cup evaporated skim milk |
| 2 cups crushed Ritz Crackers, reduced fat | non-fat cooking spray |
Preparation
Cook, drain & mash squash. Add remaining ingredients except cheese & mix well. Pour into a baking dish sprayed with non-fat cooking spray. Top with grated cheese about 15 minutes before finished baking. Bake at 375° for 45 minutes.
