Squash Casserole Lite

Ingredients

2  cups cooked yellow squash 1/2  cup fat-free margarine
Egg Beaters (=2 eggs) 1  tsp. salt
1/2  tsp. black pepper 1  cup chopped onion
1  cup grated cheese, fat-free 1  cup evaporated skim milk
2  cups crushed Ritz Crackers, reduced fat non-fat cooking spray

Preparation

Cook, drain & mash squash.  Add remaining ingredients except cheese & mix well.  Pour into a baking dish sprayed with non-fat cooking spray.   Top with grated cheese about 15 minutes before finished baking.  Bake at 375°  for 45 minutes.
