Sugarless Chocolate Cake
Ingredients
| 1/4 cup unsweetened cocoa | 1 1/2 cups cake flour |
| 2 1/2 tbs. sugar substitute | 1 tsp. soda |
| 1/2 tsp. salt | 2 tsp. vanilla extract |
| egg substitute = to 1 egg | 1/4 cup Canola oil |
| 1 cup water | 1 tbs. white vinegar |
| Non-fat cooking spray | 1/2 cup Lite syrup, optional for icing |
| 2 egg whites, optional | 1 tsp. Flavoring extract (of your choice) |
Preparation
Preheat oven to 375°. Sift together, flour, cocoa, sugar substitute, soda and salt. Add vanilla, beaten egg substitute, oil, water, & vinegar. Mix well with mixer. Spray a square Pyrex dish with cooking spray & sprinkle with flour. Bake for 35 minutes or until toothpick inserted in center comes out clean.
If Icing is desired, you may use the following
1/2 c. Lite syrup
2 egg whites
1 tsp. flavoring (of your choice) extract
Combine ingredients. Beat with electric mixer until smooth & creamy.
Spread on cake.
