Sugarless Chocolate Cake

Ingredients

1/4  cup unsweetened cocoa 1 1/2  cups cake flour
2 1/2  tbs. sugar substitute 1  tsp. soda
1/2  tsp. salt 2  tsp. vanilla extract
egg substitute = to 1 egg 1/4  cup Canola oil
1 cup water 1  tbs. white vinegar
Non-fat cooking spray 1/2  cup Lite syrup, optional for icing
2  egg whites, optional 1 tsp.  Flavoring extract (of your choice)

Preparation

Preheat oven to 375°.  Sift together,  flour, cocoa, sugar substitute, soda and salt. Add vanilla, beaten egg substitute, oil, water, & vinegar. Mix well with mixer.  Spray a square Pyrex dish with cooking spray & sprinkle with flour. Bake  for 35 minutes or until toothpick inserted in center comes out clean.

If Icing is desired, you may use the following

1/2 c. Lite syrup
2 egg whites
1 tsp. flavoring (of your choice) extract

Combine ingredients. Beat with electric mixer until smooth & creamy.  Spread on cake.
