Sugarless Date Balls

Ingredients

1/2  cup fat-free margarine 2  eggs, beaten
2  pkg. sugar substitute 8  oz. chopped dates
2  tsp. vanilla extract 1 1/2  cups Rice Krispie cereal
1/2  cup chopped pecans flaked coconut, optional

Preparation

Beat eggs. Add margarine and sugar substitute. Beat until light & fluffy.  Add dates. Cook over low heat, stirring constantly. Boil 2 minutes. Remove from heat. Add cereal, vanilla, & chopped nuts.. Shape into balls. Roll in flaked coconut if desired.
