Sugarless Date Balls
Ingredients
| 1/2 cup fat-free margarine | 2 eggs, beaten |
| 2 pkg. sugar substitute | 8 oz. chopped dates |
| 2 tsp. vanilla extract | 1 1/2 cups Rice Krispie cereal |
| 1/2 cup chopped pecans | flaked coconut, optional |
Preparation
Beat eggs. Add margarine and sugar substitute. Beat until light & fluffy. Add dates. Cook over low heat, stirring constantly. Boil 2 minutes. Remove from heat. Add cereal, vanilla, & chopped nuts.. Shape into balls. Roll in flaked coconut if desired.
