Tamale Pie

Ingredients

2  cups yellow corn meal 1  tsp. salt
2  cups cold water 4  cups boiling water
1  lb. ground chuck 1  chopped onion
1  tsp. garlic powder 1  tsp. salt
1  can tomatoes 1  chopped bell pepper
1  tbs. chili powder 1/8  tsp. black pepper
non-fat cooking spray 2  tbs. reduced fat margarine

Preparation

Brown ground chuck.  Add onion & bell pepper & cook until tender.  Add chili powder, black pepper, garlic powder, 1 tsp. salt  & tomatoes.  Simmer for 10 minutes & keep warm.  Mix cornmeal with cold water.  Add boiling water & cook about 15 minutes, or until thick.  Add  1 tsp. salt.  Spray a casserole dish with cooking spray.  Use 2/3 of cornmeal mixture on bottom & sides of casserole dish.  Pour meat mixture into casserole dish. Spread the remaining 1/3 of cornmeal mixture over meat mixture.  Dot with margarine. Bake at 375° for 40 minutes.
