Tamale Pie
Ingredients
| 2 cups yellow corn meal | 1 tsp. salt |
| 2 cups cold water | 4 cups boiling water |
| 1 lb. ground chuck | 1 chopped onion |
| 1 tsp. garlic powder | 1 tsp. salt |
| 1 can tomatoes | 1 chopped bell pepper |
| 1 tbs. chili powder | 1/8 tsp. black pepper |
| non-fat cooking spray | 2 tbs. reduced fat margarine |
Preparation
Brown ground chuck. Add onion & bell pepper & cook until tender. Add chili powder, black pepper, garlic powder, 1 tsp. salt & tomatoes. Simmer for 10 minutes & keep warm. Mix cornmeal with cold water. Add boiling water & cook about 15 minutes, or until thick. Add 1 tsp. salt. Spray a casserole dish with cooking spray. Use 2/3 of cornmeal mixture on bottom & sides of casserole dish. Pour meat mixture into casserole dish. Spread the remaining 1/3 of cornmeal mixture over meat mixture. Dot with margarine. Bake at 375° for 40 minutes.
