Turkey Breast & Mushroom Casserole
Ingredients
| 1 1/2 lbs. mushrooms | 1/2 cup chopped celery |
| 1/2 cup chopped onion | 1/2 cup fat-free mayonnaise |
| 1/4 cup chopped red bell pepper | 6 slices non-fat day old bread |
| 1/2 cup egg beaters | 16 oz. boneless turkey breast, skinned |
| 1 can low-fat cream of celery soup | non-fat butter spray |
Preparation
Spray bread with non-fat butter spray & break into bite sized pieces. Use 1/2 of bread to line bottom of 2 qt. casserole dish sprayed with non-fat butter spray. Combine mayonnaise, mushrooms, onion, bell pepper, & celery & spread over bread in casserole dish. Mix egg beaters & soup & spread on top. Sprinkle remaining bread over soup mixture. Refrigerate overnight. Place Turkey on top of casserole & bake for 1 hour at 350°.
