Sweet Potato Pineapple Casserole
|6 boiled & mashed sweet potatoes||1/2 cup brown sugar|
|1 can crushed pineapple||1/4 cup margarine|
|1/2 cup flaked coconut||1 cup chopped pecans|
Boil potatoes with skins on. Peel & mash potatoes. Combine pineapple, margarine, & brown sugar. Cook over medium heat , stirring constantly until mixture boils for 1 minute. Reserve enough of the mixture to cover top of casserole. Combine the remainder of the mixture with the mashed sweet potatoes. Sprinkle coconut & pecans on top of casserole. Cover & bake at 325° F for 35 to 40 minutes.
